You Don't Need an Immersion Blender, but it Helps.

Roasted Butternut Squash Surprise Soup

Normally this type of soup would be blended in the pot before serving. However, if your favorite immersion blender is hundreds of miles away you can finish the soup in a food processer. Do not use a blender with hot soup, the lid can fly off and seriously burn you, ER visits will follow. Another option is to dice all the vegetables super fine and the will start to dissolve while the soup simmers.

Clearly if you wish you can order one on amazon and make the soup in a day or two. That'll give you time to make sure you have all the ingredients or you can order those as well.


Start by sauteing the first three ingredients (listed below) until golden and aromatic.

Next add some more Olive oil and lightly sautee all the vegetables and the surprise fruit. Optionally, you can roast these ingredients instead.
Step three, add enough water to cover, let boil and reduce to simmer.

Lastly, season the soup with the spices listed below or however your heart desires. At this point if you're lucky enough to have an immersion blender you would blend the soup to your desired consistency.

1 yellow onion
1/2 head garlic
1 inch Ginger
1 medium butternut squash (2-3 pounds)
3 large potatoes
1 Apple.
Salt
Black pepper
Pinch of cayenne
Smoked paprika
Touch of cinnamon
Nutmeg
